Brewer’s Cut Brazil: Still Time to Choose with Precision

One of the most powerful things about the Brewer’s Cut is timing.
Not just when hops are harvested, but when brewers are invited into the conversation.

In Brazil, this year’s Brewer’s Cut brought together a group of breweries that understand that hop selection is not a transactional step, but a strategic decision that directly shapes aroma, flavor, and consistency. During the event, we worked side by side with:

  • Salva Craft Beer

  • Cervejaria FIL

  • Hermosa Beer Co.

  • Hidden Brewpub

  • Cerveja Al Capone

Each of them came with the same goal: to understand what they are choosing  and why.

What “Brewer’s Cut” Really Means

Brewer’s Cut is not about picking a name on a spec sheet.
It’s about evaluating lots in context.

During the session, brewers compared:

  • Sensory profiles across multiple lots of the same variety

  • Differences between harvest windows (early vs. mid vs. late pick)

  • How a 2025 lot expresses itself compared to previous harvest years

  • How terroir, drying decisions, and storage influence aroma stability

This kind of comparison is only possible when you work directly with lot-level access, not generic inventory.

Information That Goes Beyond the Sample Bag

What we bring as Hops Company goes far beyond samples on a table.

We can speak in detail about:

  • Harvest window decisions and how they affect citrus sharpness, green notes, or ripe fruit expression

  • Sensory evolution of a variety across different crops and farms

  • Comparative behavior of lots during dry hopping versus late kettle additions

  • Expected aroma retention and shelf-life behavior, based on past selections

And we can do this because:

  • We visit your brewery

  • We are in the fields during harvest

  • We are in constant contact with the farm owners and selection teams

  • We track how each lot performs year after year, not in isolation

That connection, field to brewhouse, is the core of Brewer’s Cut.

You’re Still on Time

One key message we want to reinforce is this:
Brewer’s Cut doesn’t end with the event.

Brazilian breweries are still on time to:

  • Review available lots

  • Discuss ideal harvest windows for specific recipes

  • Compare profiles with other crop years

  • Request technical input before committing volumes

Selection is a process, not a deadline.

From Farms to Flavor Decisions

Because we work directly with farms and because those conversations continue long after harvest, we can translate what’s happening in the field into practical brewing decisions.

That means helping you answer questions like:

  • Why does this lot feel brighter than last year’s?

  • Why does this harvest show more stone fruit and less resin?

  • How will this behave in a hazy IPA versus a cold IPA or lager?

Those answers don’t come from spreadsheets alone.
They come from presence, continuity, and curation.

Let’s Keep the Conversation Going

There is still time to go deeper into the details, understand the lots, and make choices that truly serve your beers.

At Hops Company, Brewer’s Cut is not about selling hops.
It’s about helping brewers choose with confidence.
